Susan Ellis

Susan "Sue" Ellis, 70, of St. Charles, died on July 21, 2026, at OMC in Rochester, MN. Born on August 8, 1955, in Eyota, Francis and Donna Daywitt.

A graduate of Eyota High School, Susan spent many years working as a waitress, where she made countless friends and brightened the days of many patrons.

Sue was married to Steve Ellringer, with whom she welcomed her son, Kenny. After their divorce, Sue found love again with Bernie Ellis, and they enjoyed 18 wonderful years of marriage filled with adventure and happiness. Together, they loved going on car rides, trucking across the country, and taking trips to sunny California. Sue thrived in the company of her friends and built a community around her through shared laughter and unforgettable memories.

Sue is survived by her husband, Bernie Ellis; son, Kenny Ellringer; sisters, Karen and Barb; sister-in-law, Carolyn Ellis; and best friends, Ruth Ann Nigon, and Jeannie Jones.

She is preceded in death by her parents.

A memorial service will be held on Monday, July 27, 2026 at Hoff Funeral Home in St. Charles at 10am. Visitation will begin at 9:30am.
